The Bikini Cocktail
Serves 10 guests
Ingredients for the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar
To make the Premix (makes 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Directions
For the Citrus Syrup: Place all the ingredients inside a pan, heat until it reaches a simmer, mixing so the sugar melts. After that, turn off the burner allowing it to cool down entirely. Decant into an sterilised bottle, cap it keeping it in the fridge, where it will keep for about four weeks.
Preparing the Batch Mix: Mix the specified liquid ingredients into one large bottle, leave to sit for an hour, then pass it through best through muslin, to ensure it's completely strained.
To serve: Add 85ml of the cocktail base into your mixing glass packed with ice, and stir lightly for about 60 seconds to chill. Strain to a chilled martini glass or a similar vessel, decorate with a few cranberries and finish using a brief mist of the essential oil over the drink.
